My, my! Last week was such a crazy one with me not feeling in quite tip-top shape. But I have much higher hopes for this week now that I’m back to feeling better.

Here is a quick Monday recipe for you. Quick AND easy, I should say!

STUFFED FLANK STEAK

Isn’t that a lovely piece of meat?? Flank steak is generally pretty lean. When I was younger, my family and I only got to eat Stuffed Flank Steak when we went east to Ohio to visit family since it was next to impossible to find this cut of meat in Minnesota where we lived. Nowadays though, you can even find a flank steak at your local SuperWalmart.

Cut three pieces of cooking twine used and lay them horizontally across a plate. Unfold the flank steak over the twine. Pound briefly with a meat mallet. Sprinkle the inside of the steak with 1/4 tsp. black pepper, 1/4 tsp. kosher salt, 1/4 tsp. ground thyme and 1/2 tsp. dried oregano or to taste.

Place pre-cooked stuffing in the middle of the flank steak. (I use Stove Top Savory Herb stuffing since it is extremely easy to make and tastes delicious.) Fold the sides of the steak back in, tying the three pieces of twine to hold it together.

Place the rest of the pre-cooked stuffing in the bottom of a medium or large crockpot. Pour 1/2 cup of beef broth around the stuffing. Place the flank steak on top. Cook for 8 to 9 hours for an amazingly tender flank steak.

To serve, cut the twine with a scissors, slice the steak with the stuffing and serve with additional stuffing on the side.

Stuffed flank steak is a hearty meal that requires very little time for preparation. See you Tuesday for some more tips!
